Bamboo Flooring has a unique look all it's own. Bamboo is really not a wood it's classified as a type of Grass which after harvested regenerates very fast usually within 3-8 years. Known for its hardness and durability if allowed to mature at the correct age before its harvested, makes for an eye catching floor quite commonly found in unique upscale restaurants, hotels, museums and homes.
Commonly bamboo flooring is offered in two versions the "Vertical Grain or Horizontal grain" both giving you two distinctive looks.

Bamboo flooring is even offered in different stained colors and is even manufactured using a system of gluing and pressing small shards of bamboo into boards called Strand which is even harder and heavier than standard bamboo flooring. Some styles are offered in an easy Click Lock installation style.

I want to glue my next floor down to a concrete sub-surface, if the "recommended" (per your site) style of installation is Floating for an engineered or hardwood bamboo can I still lay it with glue?

"Most" manufacturers will allow their engineered floating click loc or regular tongue and groove flooring to be also directly glued down. Which flooring are you referring too.
